The tapas chain, which has more than 350 locations in Spain and elsewhere in the world, now has 17 U.S. locations in Florida, New York and Washington, D.C. As the name implies, the chain offers 100 varieties of its signature item, the montadito, which is a two-to-three-bite sandwich on a tiny baguette made with ingredients such as Serrano ham and smoked salmon. What’s next? What’s new? The search for the next great restaurant concept is never ending. Consumers, investors and franchisees alike are always looking out for a new brand poised to take the industry by storm.
In our third annual look at Breakout Brands, Nation’s Restaurant News identifies cutting-edge concepts that are set to redefine foodservice. This year’s grouping is equally large and small, home-grown and imported from overseas, healthful and indulgent, entertainment-fueled and street food-oriented. Five of the 10 brands are from California, which consistently pushes the envelope and has become (or maybe always has been) the home of restaurant innovation.
The editors at NRN have identified these brands and assigned what we call “breakout factors” to each concept, whether unique menu items, differentiated service, financial backing or even distinctive beverage programs. The varying elements to success all lead to the same place — excitement from guests, fellow operators, investors and franchise partners.
