The ideal customer situation is to have each person order an appetizer, an entree, and a dessert. After all, a complete meal for them means a full pocketbook for you, right? Pleasing the palates of hungry and busy customers can be a challenge for any restaurateur. Here are some ways that you can get your customers singing about your dessert choices.

1. Reduce the size of your apps and entrees
Americans have amazing appetites, but sometimes portion sizes in restaurants make them call for the doggie bag before asking for the dessert menu. If you find that every customer needs a to-go box, you might want to reduce portion sizes. Practice a renewed devotion to quality, not quantity.
2. Leave the dessert menu on the table
According to a poll on SmartBrief, the average customer spends around an hour sitting down at the table. If they are with friends, they’re most likely to be talking about their day, not remembering all of the desserts on the menu. A small menu stand with exotic and appetizing desserts will whet their appetites for more food, and give them a chance to talk about it with their friends.
3. Think outside of the circle
Cakes and pies are great, and they can be seen in nearly every restaurant from the east to the west. Frozen yogurt, on the other hand, isn’t served in a lot of restaurants and is gaining in popularity. Froyo is quite inexpensive to make and dispense, with some restaurants making up to 85% profit. 4. Make them fresh and in the house
Trust us. While it may seem like nothing to get cakes and pies from a food supply place, having items which are made fresh goes a lot further in pleasing your clientele. This is the last part of their dining experience, so you want to give them something good to remember.
5. Have your servers upsell
Servers are the front line to the customers. They have the power of persuasion on their side. Have them use phrases like, ‘don’t forget to save room for dessert’ which plants a seed.
6. Put a dessert case at the counter
The Marietta Diner in Marietta, Georgia displays all of their cakes in cases so that all of the customers can see how beautiful they are. Since it is the first food that a customer sees, it also stays firmly in their mind throughout the meal, prompting them to purchase.
Skipping dessert is great when eating at home, but going out to a restaurant is supposed to be an experience. It’s okay to have your customers be a little bad on their diets and spend a little more cash in your restaurant isn’t it? We thought so. Make it happen by using these tips.
